I used a green and yellow pepper for this recipe because that’s what I found this week at our favorite local market.😉 You can use green, red, orange, or yellow peppers for this recipe. I used a medium yellow onion for my fajitas. You can use either a red, white, or yellow onion. Garlic may not be a traditional ingredient for fajitas, but I love the extra burst of flavor it gives so I add it to my fajitas! When making dishes for those you love, I suggest using the ingredients they love, even if they aren’t “traditional.” So, for example, if your family loves poblano peppers….add them to your fajitas! Want some extra heat? Toss in some jalapenos!

You’ll get more depth of flavor if you have the time to let the chicken marinate for a while before sauteing; but the ingredients in the marinade are full of flavor and will give you great fajitas even if you don’t have time to let the chicken marinate. This marinade mixture is thick. You don’t need to drain and you don’t need to add any more oil to your pan before sauteing.

Low Carb Chicken Fajitas

Ingredients
- ¼ cup olive oil
- 2 tablespoons lime juice
- 1½ tablespoons tamari
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon granulated sugar substitute (Swerve)
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2-2½ pounds chicken, cut into strips
- 2 medium peppers, cut into strips
- 1 medium onion, sliced
- 4 garlic cloves, minced
- Optional toppings: avocado slices, black olives, chopped tomatoes, shredded cheddar cheese, sour cream
Instructions
1. In a large bowl, add olive oil, lime juice, tamari, chili powder, cumin, sugar, salt, and pepper. Stir or whisk to combine ingredients.
2. Add chicken and stir to completely coat chicken in marinade. Cover with plastic wrap and refrigerate for 30-60 minutes.
3. When ready to prepare fajitas, heat a large skillet over medium high heat. Saute chicken, turning frequently, until cooked through. Saute in batches, if necessary. Cover with aluminum foil and set aside.
4. In same skillet, saute peppers and onion for 5 minutes, or until softened. Add garlic during last minute.
5. Serve fajitas immediately. Top with avocado slices, black olives, chopped tomatoes, shredded cheddar cheese, and sour cream if desired.
6. Store leftovers, in a covered container, in the refrigerator.
