We recently had family and friends up to our house, and this low carb chili for a crowd was a big hit with everyone! We had lots of food, appetizers and mains, but this chili was the best comfort food of all! If I didn’t tell them, no one would have guessed this chili is also low carb. I used 93% ground beef for my chili. You can definitely use an 85 or 80 percent lean mixture if you’d like. Whatever you choose, you’ll want to drain the grease before adding the cooked beef to the chili. If you’d like, you could substitute with ground turkey or use a combination of ground beef and ground turkey. For our vegetables, we add bell peppers, onions, and garlic cloves. You can use any color or color combination of bell pepper for your chili. I used a red onion for mine, but a yellow onion would be a perfect option as well. I added two minced garlic cloves to my chili, but you can add more if you’d like. As a time saver, you can start sauteing your vegetables and gather the rest of your chili ingredients at the same time your ground beef is cooking.
What other ingredients go into this low carb chili for a crowd?
I used a combination of regular diced tomatoes and petite diced tomatoes because I wanted some smaller pieces of tomatoes in the chili. Alternately, you can use all regular or all petite if you’d like. Most of the usual bean types added to chili are high in carbs. Black soy beans, however, are relatively low in carbs and that’s what we’re using in this chili. My husband told me he couldn’t tell the difference and he loves my chili! We then add some beef broth to our chili, which gives it awesome flavor. To this we add chili powder, cumin, keto granulated sugar, salt, and pepper. This is a fairly mild chili, but if you want to increase the heat, you could add some diced jalapenos, red pepper flakes, or some hot sauce to yours!

I love serving chili with a myriad of delicious toppings. Some great options included diced onions, diced tomatoes, guacamole, shredded cheese, sliced avocados, sliced black olives, and sour cream. For some extra heat, you could top yours with some sliced jalapenos! A great option is to serve this chili with a green salad or with a side of keto biscuits, cornbread, crackers, or English muffins. If you’d like, you can also pair this chili with a low carb sandwich or lettuce wrap. This chili reheats well either in the microwave or on the stovetop, so it works great for leftovers too!

Ingredients
- 3 pounds ground beef
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 bell peppers, diced
- ½ medium red onion, diced
- 2 garlic cloves, minced
- 1 (28 ounce) can diced tomatoes
- 1 (28 ounce) can petite diced tomatoes
- 3 (15 ounce) cans black soy beans
- 2 cups beef broth
- 2 tablespoons chili powder
- 1½ tablespoons cumin
- 1 tablespoon granulated sugar substitute (Swerve)
- ½ teaspoon salt
- ½ teaspoon pepper
- Optional: top with diced onions, diced tomatoes, shredded cheese, or sour cream if desired.
Instructions
1. In a large skillet over medium high heat, add ground beef. Cook until beef is no longer pink, breaking it up into small pieces as it cooks. Drain grease.
2. In a large stockpot, over medium heat, add butter and olive oil. Once butter is melted, add diced peppers and onions. Saute for 7-8 minutes, or until vegetables start to soften. Add garlic during last minute.
3. To stockpot, add cooked ground beef, diced tomatoes, black soy beans, beef broth, chili powder, cumin, sugar, salt, and pepper. Stir to combine.
4. Over high heat, bring mixture to a boil. Decrease to medium heat and simmer for 25-30 minutes, stirring occasionally.
5. Top with diced onions, diced tomatoes, shredded cheese, or sour cream if desired.
