What is the difference between regular and English cucumbers?
There are about 100 varieties of cucumbers found throughout the world. There are a few main types, and these include pickling, slicing, and English cucumbers. For this appetizer, I used English cucumbers for a few reasons. First, their skin is thinner than regular slicing cucumbers. For this reason, you can leave the skin on if you’d like. English cucumbers are also longer and thinner than regular slicing cucumbers and, when sliced, I like the size of appetizer they make. The other reason I like English cucumbers for this recipe is because their seeds are very small. This makes them sweeter than regular cucumbers and you don’t have to remove the seeds. Because the seeds are so small, English cucumbers are also less juicy than regular slicing cucumbers. Because of this, your cream cheese mixture won’t try to slide off your cucumber rounds!😉
What ingredients go into the topping for our low carb dilly cucumber rounds?
We start with cream cheese for the creamy base of our topping mixture. To this we add fresh dill. I love dill and I especially love fresh dill. If you use dried dill, you’ll want to use 2 teaspoons of dried dill in place of the 2 tablespoons of fresh. I found using 2 tablespoons of heavy whipping cream and 2 tablespoons of keto mayonnaise gave this mixture the perfect consistency. If you’d like a thinner mixture, you can add a little more heavy whipping cream. We then add garlic and onion powder to finish off our mixture. After topping the cucumber rounds evenly with the cream cheese mixture, we top each round with a small slice of tomato. I used grape tomatoes and quartered them, topping each round with a quarter sized piece. Depending on the size of your tomatoes, you can halve or quarter them.
Are these low carb dilly cucumber rounds difficult to make?
This is a fun and easy appetizer to make, but there are a few things you can do to ensure yours turn out perfectly every time! First, you can peel your cucumbers, leave all the peel on, or partially peel, resulting in stripes as I did for mine. Next, try to slice your cucumbers into similar sized rounds. For the topping, you’ll want to start with softened cream cheese. I recommend using an electric mixer to beat your cream cheese mixture. If you choose to mix by hand, make sure your cream cheese is as soft as possible and stir well to combine all ingredients. You can use a piping bag to pipe your mixture onto the cucumber rounds. Alternately, you can place your mixture into a Ziploc bag, cut off a small piece of one of the corners and pipe it that way.

Low Carb Dilly Cucumber Rounds

Ingredients
- 2 medium English cucumbers, sliced into 40 pieces
- 10 grape tomatoes
- 8 ounces cream cheese, softened
- 2 tablespoons fresh chopped dill
- 2 tablespoons heavy whipping cream
- 2 tablespoons keto mayonnaise
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
1. Place sliced cucumbers onto a large plate or platter. Set aside.
2. Quarter tomatoes and set aside.
3. In a medium mixing bowl, add remaining ingredients. Beat until smooth and combined.
4. Use a piping bag or plastic bag with corner cut off to pipe cream cheese mixture onto cucumber rounds. Alternately, spoon mixture onto cucumber rounds.
5. Top each cucumber round with a tomato slice.
6. Serve immediately, or refrigerate until ready to serve.
Notes
After slicing your cucumbers, if they're at all wet, you can dab them dry with a paper towel.
