Let’s talk about our green chiles!
You have some great options for the kind of green chili peppers you use for this dish. I used canned green chiles for mine. Usually canned green chiles are Anaheim chiles. Anaheim peppers are usually fairly mild in their heat level. Since most of the heat in peppers comes from their seeds and membranes, you can either remove them or leave them based on your spice preference. You can also use canned Hatch chiles and these will be hotter than Anaheim chiles. Another good option is to use poblano chiles. These are also usually hotter than Anaheim chiles. If you’d like to roast your own chiles, you can do this directly on the stovetop, by broiling them in the oven, or by grilling them. After getting them charred on all sides, you’ll want to steam them in a plastic bag or bowl for about 10 minutes before removing the charred skins.
What other ingredients go into these low carb green chili squares?
We combine just a few simple ingredients to make this dish, but the combination results in an amazingly flavorful casserole. I topped my chiles with shredded cheddar cheese. You can use any good melting cheese you’d like. Some good options include colby, gruyere, havarti, Monterey jack, mozzarella, provolone, smoked gouda, or even Swiss cheese. If you’d like to add a little heat, you could use pepper jack cheese. I do recommend shredding your own cheese as it melts the very best! For our top layer, we combine eggs with heavy whipping cream, salt, pepper, and smoked paprika. This creates an awesome top that browns nicely and is absolutely delicious! You can use regular paprika in place of the smoked paprika if you’d prefer.
