I love salads and ground turkey is one of the things I frequently add to my salads. This is my version of a ground turkey taco salad and I hope you enjoy it as much as my family does.

I used a 93% lean ground turkey mixture for my meat. It is my favorite mixture, but you can use a 90% or an 85% mixture if you’d prefer. We add diced onions, salt, and pepper to our ground turkey. It only takes a little onion to add great flavor, and this helps to keep the carb count down. We then add some water, tomato paste, and salsa. These create a nice tomato flavor, make our mixture juicy, and keep our carb count low. Depending on how spicy you’d like your salad, you can use mild, medium, or hot salsa. Just read your nutrition label to make sure your salsa doesn’t contain any sugar and that it’s low carb. For seasonings, we add some chili powder, cumin, and smoked paprika. Just a little keto sugar helps to balance out the flavors of our mixture.

Our taco meat and salad ingredients add so much flavor to this dish, we don’t need to add a complicated dressing. I think you’ll be amazed at how delicious this dressing is though. We simply combine equal parts salsa and sour cream to make a creamy and delicious dressing for our salad. You can control the amount of heat in your dressing by adding either mild, medium, or hot salsa. There are so many great salsas out there to choose from or you can use homemade salsa if you’d like. You could even use a tomatillo salsa for your dressing. I’d recommend you use full fat sour cream and look for the lowest carb option. You can easily double this dressing and use the extra to drizzle over meats and vegetables or use as a quick and easy dip for raw vegetables!
What other ingredients go into this low carb ground turkey taco salad?
I used my favorite ingredients for this salad; but you have many options to make this salad your own. I love iceberg lettuce and it is my go-to for most salads. You could use romaine or your favorite lettuce for your salad. The same goes with the shredded cheese. Use your favorite kind or even use a mixture of cheeses for your salad. I used cherry tomatoes for my salad, but you can use your favorite tomatoes for yours. I love avocados and think they work perfectly in this salad. You can use diced or sliced avocados for your salad. You could even top your salad with some guacamole. If you’d like some additional options, you could add chopped bell peppers, black olives, green onions, jalapenos or pickled jalapenos, or sliced radishes.

Ingredients
For the dressing:
- ⅓ cup salsa
- ⅓ cup sour cream
For the turkey taco meat:
- 1 pound ground turkey
- 2 tablespoons diced onion
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- ½ cup water
- 1 tablespoon tomato paste
- ¾ cup salsa
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon granulated sugar substitute (Swerve)
- 1 teaspoon smoked paprika
For the salad:
- 10 cups chopped iceberg lettuce
- 1⅓ cups shredded colby jack cheese
- 1 cup halved or quartered cherry tomatoes
- 1 avocado, diced
Instructions
For the dressing:
1. In a small mixing bowl, add salsa and sour cream. Stir to combine. Set aside.
For the turkey taco meat:
1. In a large skillet over medium high heat, add turkey, onions, salt, and pepper. Saute until turkey is until no longer pink, breaking up into small pieces as it cooks. Drain excess fat if necessary.
2. In a small mixing bowl, combine water and tomato paste. Stir until tomato paste is dissolved and mixture is smooth. Add to turkey in skillet.
3. To the skillet, add salsa, chili powder, cumin, sugar, and smoked paprika. Stir to combine. Simmer over medium heat 5-7 minutes or until thickened.
For the salad:
1. Divide lettuce evenly among 4 plates or bowls.
2. Top each evenly with turkey taco meat, cheese, tomatoes, and avocadoes.
3. Drizzle dressing over salads.
4. Alternately, you can place all of the lettuce onto a large platter. Top with all of the taco meat, cheese, tomatoes, and avocado. Drizzle dressing evenly over salad and serve.
