I’ve made and enjoyed a variety of keto mashed vegetables, but when I made this low carb mashed kohlrabi, I moved it to the top of the list! Mashed cauliflower, rutabaga, and turnips are awesome keto options; but I think this mashed kohlrabi will be my new go-to choice! I hope you’ll enjoy this as much as I do!

And although it is referred to as German turnip, it is actually related to the cabbage family. When I was growing up, we had a large garden and grew kohlrabi. My mom sauteed it and that’s how I often make it, but it can be eaten raw as well. I love the taste of kohlrabi, but it has a unique flavor that is hard to describe and is just one of those foods you have to taste for yourself. Kohlrabi is low in calories and carbs but is rich in nutrients. It provides us with a source of folate, magnesium, manganese, potassium, and vitamins B and C. It is also a good source of fiber.
How do I make this low carb mashed kohlrabi?
This is an easy dish to make, but there are a few things you should know so yours will turn out perfectly every time. First, you’ll want to peel and chop your kohlrabi. The skin is thick and the vegetable itself is hard, so use a good peeler and knife when preparing your kohlrabi. Next, you’ll want to boil your kohlrabi until it is fork tender. The time it takes to get to fork tender will vary based on the size of your kohlrabi pieces. Mine take longer to cook because I live in Colorado and am cooking at an elevation of about 7350 feet.😉I highly recommend using an immersion blender or a food processor to blend or process your kohlrabi until smooth, or to your desired consistency. You can use a potato masher, but because of the texture of kohlrabi, you’ll have a lumpier, but still delicious, mash.
How can I serve this low carb mashed kohlrabi?
This mashed kohlrabi can be served as a side for a variety of meals. It is easy enough to serve for any meal, yet elegant enough to serve for holidays and special occasions. You can serve this mashed kohlrabi as is, or you can top it with more butter if you’d like. For a pretty presentation, you could also sprinkle a little chopped parsley over your mashed kohlrabi. You can serve this dish alongside beef, chicken, pork, or seafood dishes. It can also be served with burgers, keto sandwiches, or wraps. You can also pair this with a keto casserole as well. Low Carb Mashed Kohlrabi
I can’t even believe how much I love this low carb mashed kohlrabi! Move over cauliflower, there’s a new sheriff in town!
Ingredients
- 2½ pounds kohlrabi, peeled and chopped
- 3 tablespoons butter
- 3 tablespoons heavy whipping cream
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
1. Place kohlrabi in a large stockpot with enough water to completely cover kohlrabi.
2. Over high heat, bring water to a boil. Boil until fork tender, 30-45 minutes.
3. Drain kohlrabi well.
4. To same large stockpot, add butter, heavy whipping cream, salt, and pepper. Heat over medium heat until butter is melted.
5. Add kohlrabi back to stockpot. Use an immersion blender and blend until smooth.
6. Serve immediately. Top with additional butter if desired.
