But I think the most important thing to know about turnips is that if they aren’t drained well, you’ll end up with a watery mixture. I drain my turnips in a colander, then use my hands to press out the extra moisture. I only needed to add 1 tablespoon of butter and 1 tablespoon of sour cream to get the consistency I wanted for my mashed turnips as I like them a bit rustic. If you’d like, you can add 1-2 tablespoons of heavy cream or even more until you find the consistency you like!

- ½ teaspoon salt
- ⅛ teaspoon pepper
- 1 tablespoons butter
- 1 tablespoons sour cream
- 1-2 tablespoons heavy cream, as needed to reach desired consistency

Instructions
1. Place turnips in a large stockpot with enough water to completely cover turnips.
2. Over high heat, bring water to a boil. Boil until fork tender, 30-40 minutes.
3. Drain turnips well.
