We use ground beef, Italian sausage, and Mexican chorizo to make this low carb meat lover’s chili. There’s just something about chili that says “comfort food!” I’ve made chili for everything from football parties to a special Christmas Eve meal. I hope you’ll enjoy this delicious and satisfying chili as much as we do!
Let’s talk about our meats!
For this chili, we are using a combination of ground beef, Italian sausage, and Mexican chorizo. I used a 93% lean ground beef mixture for my chili. I chose this because I didn’t want to lose any of the amazing flavor of the chorizo by having to have to drain the grease. You can use an 80 or 85% mixture, but you then might want to drain the grease. For sausage, you can use mild or hot sausage. If you are using links, you’ll want to remove the casings before cooking. Spanish chorizo is a cured and dried sausage which is cooked and ready to eat, while Mexican chorizo is a raw ground meat mixture that needs to be cooked. We’re using Mexican chorizo for this chili. I used pork chorizo, but you can use beef if you’d prefer. If you’d like, you can even make your own Mexican chorizo!
Can I adjust the heat level in this low carb meat lover’s chili?
Absolutely! You have some great options for changing up the heat level of your chili. As written, this is a fairly mild chili. I used mild Italian sausage, but you can up the heat in your chili by using hot Italian sausage. If you want to add more heat, you can add some hot peppers. Some diced jalapenos would add a nice heat level. A good thing to remember is that the majority of the heat in jalapenos is in the seeds and membranes. So if you want more heat, add in some of those! You can even use hotter peppers such as habanero or serrano peppers for a really hot option! Another way to up the heat level in your chili would be to add some of your favorite hot sauce to it. You could also use more chili powder or add some cayenne pepper or red pepper flakes.
How can I serve this low carb meat lover’s chili?
You have some amazing low carb options for serving this chili. You can always top your chili with some diced onions, shredded cheese, or sour cream. Yum! Some other topping ideas include guacamole, cubed or sliced avocados, diced tomatoes, or sliced olives. For some extra heat, you can even top this chili with some sliced jalapenos. For bread options, you can serve your chili with some keto biscuits, cornbread, or English muffins. If you’d like, you can also serve it with some keto crackers. This chili also pairs nicely with most any salad or coleslaw. One of my favorite things to do for parties is to serve a variety of appetizers, then serve this chili, alongside all the topping options, as the main dish.

*You’ll want to use Mexican chorizo, which is the ground meat mixture that needs to be cooked and not Spanish chorizo, which is a cured and dried cooked sausage.

This low carb meat lover’s chili combines 3 kinds of meats to create an awesome and amazingly delicious chili! It’s a tasty and filling chili that will always satisfy!
Ingredients
- 1 pound ground beef
- 1 pound mild Italian sausage
- 9 ounces Mexican chorizo
- 2 tablespoons olive oil
- ½ cup diced green peppers
- ½ cup diced red peppers
- ⅓ cup diced onion
- 1 (28 ounce) can petite diced tomatoes
- 1 (14.5 ounce) can diced tomatoes
- 2 (15 ounce) cans black soy beans
- 1 cup beef broth
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 tablespoon unsweetened cocoa powder
- 2 teaspoons granulated sugar substitute (Swerve)
- ½ teaspoon salt
- ½ teaspoon pepper
- Optional: top with additional diced onions, shredded cheddar cheese, or sour cream
Instructions
1. In a large skillet over medium high heat, add ground beef, Italian sausage, and chorizo. Cook until meat is cooked through, breaking it up into small pieces as it cooks.
2. While meat is cooking, in a large stockpot over medium high heat, saute peppers and onion in olive oil. Cook until vegetables start to soften, 5-7 minutes.
3. Add meat to stockpot. Add diced tomatoes, black soy beans, beef broth, chili powder, cumin, cocoa powder, sugar, salt, and pepper. Stir to combine.
4. Over high heat, bring mixture to a boil. Decrease to medium heat and simmer for 25-30 minutes, stirring occasionally.
5. Top with diced onions, shredded cheddar cheese, or sour cream if desired.
