Pre-shredded cheeses often add anti-caking ingredients which are unnecessary if you shred your own cheese. To our cheese, we simply add some Italian seasoning. I like to mix the two together in a bowl, as I find this the best way to evenly mix the cheese with the seasoning. For the pepperoni, I used sugar free pepperoni slices which contained a combination of beef and pork. You can also use turkey pepperoni for your chips if you’d prefer.

First, you’ll want to line a couple of large baking sheets with parchment paper. Next, I highly recommend buying a block of mozzarella cheese and shredding it yourself. This melts the absolute best. When placing your mounds of cheese onto the parchment paper, you’ll want to leave a little space in between mounds as the cheese will spread out a bit as it melts. Even though you’ll want to place your pepperoni onto the center of the cheese, your chips will still likely not look completely uniform. You’ll want to bake your chips until the cheese is nicely browned around the edges. Last, I like to let my chips set for a few minutes, to allow them to crisp up nicely, before serving.

You have some super options for the kind of marinara you serve with these chips. You can actually use either marinara or spaghetti sauce. When buying, you’ll want to read the nutrition labels to make sure the carb count is low and that there is no added sugar or other ingredients you don’t want in your sauce. It’s also incredibly easy to make homemade keto marinara! This is my go-to marinara recipe!

½ tablespoon olive oil
1 tablespoon finely diced onion
3 ounces tomato paste
1 cup water
1 tablespoon Italian seasoning
½ teaspoon granulated sugar substitute (Swerve)
Directions:
- In a small saucepan, over medium heat, add oil. Once hot, saute onion until softened, about 4 minutes. Add remaining sauce ingredients and whisk to combine.

Ingredients
- 2 cups shredded mozzarella cheese
- 2 teaspoons Italian seasoning
- 32 pepperoni slices
- Optional: serve with keto marinara sauce
Instructions
1. Pre-heat oven to 375 degrees. Line 2 large baking sheets with parchment paper. Set aside.
2. Add shredded cheese and Italian seasoning to a medium mixing bowl and toss to combine.
3. Place 1 tablespoon piles of shredded mozzarella cheese onto baking sheets, leaving space between them. Top each pile of cheese with one slice of pepperoni.
4. Bake for 8-10 minutes, or until nicely browned at edges.
5. Allow to cool for a few minutes to crisp up chips. Serve with keto marinara sauce if desired.
