I’m definitely seeing these low carb roasted radishes on my menu next Thanksgiving. For those of you missing your potatoes, these are very similar in both taste and texture to baby red potatoes.
Are radishes keto?
Yes! Even though they are classified as a root vegetable, radishes are very low in carbs. You can eat about 10 of these little red beauties and only net about 1 gram of carbs. They also are a good source of Vitamin C and contain about 1 gram of fiber per 1/2 cup serving.

I live in Colorado in the foothills about 25 miles southwest of Denver. I’m at an elevation of about 7350 feet. I’ve been in Colorado for about 30 years and absolutely love it. We often have deer and sometimes elk come and visit us. We also have an occasional visit from the bears and even from a mountain lion once in a while. I haven’t seen them often; but we also have some wild turkeys that make a rare appearance. This was my view this past week just down the hill from my house.

*I started checking my radishes at 25 minutes, and found they were fork tender and crisping up nicely at 30 minutes. If you’d like yours firmer, you can remove from the oven sooner. If you’d like them softer, you can roast for an additional 5-10 minutes.
*I love dill, so I added it to this recipe. You can add your favorite seasonings to make this according to your likes. Some options include chili powder, garlic powder, Italian seasoning, onion powder, and paprika.

Low Carb Roasted Radishes

Ingredients
- 16 ounces (1 pound) radishes, trimmed and cut in half
- 2 tablespoons olive oil
- ½ teaspoon dill
- ½ teaspoon salt
- ⅛ teaspoon pepper
Instructions
1. Pre-heat oven to 400 degrees.
2. Prepare radishes by trimming both ends and cutting in half.
3. Pour olive oil into a 9x13 inch oven safe dish.
4. Place radishes in dish and season with dill, salt, and pepper.
5. Roast for 30 minutes or until desired firmness, stirring every 10 minutes or so.
