I like to keep them bite sized. After cutting the chicken into cubes, we season the chicken with salt and pepper, then saute in a mixture of butter and olive oil. You’ll want to saute your chicken until it’s cooked through and no longer pink. After cooking the chicken, we remove it to a plate and use the same skillet to make our sauce.

This low carb Rotel chicken skillet is perfectly cheesy, creamy, and delicious! You can make this dish as mild or as spicy as you’d like!
Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1½ pounds chicken breasts, cubed
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 3 ounces cream cheese, softened
- ½ cup heavy whipping cream
- ½ teaspoon chili powder
- ½ teaspoon cumin
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 cups shredded colby jack cheese
Instructions
1. In a large skillet, over medium high heat, add butter and olive oil. Season chicken with salt and pepper.
2. Saute chicken until cooked through. Remove to a plate.
3. To the skillet, add Rotel, cream cheese, heavy whipping cream, chili powder, cumin, garlic powder, and onion powder. Stir to combine and bring to a boil over medium high heat.
4. Add cheese and stir to combine. Add chicken back to skillet.
5. Decrease heat and simmer for 10 minutes.
