We’re using simple, yet incredibly flavorful ingredients to make these antipasto bites. Our three ingredient bites consist of olives, salami slices, and mozzarella cheese. I used half black olives and half pimento stuffed green olives for my bites. You can all black or all pimento stuffed green olives for yours. Some other great alternatives include using plain green olives or Kalamata olives. For the salami, you’ll want to read nutritional labels to ensure there is no added sugar or other ingredients you don’t want in your meat. You can also substitute with pepperoni or even prosciutto if you’d like. For cheese, I used a block of mozzarella and cut it into 24 evenly shaped pieces. But you have any number of substitutions you can use for your cheese. Some great options include cheddar, colby, colby jack, gouda, havarti, provolone, and Swiss cheese.

Low Carb Salami Antipasto Bites
These low carb salami antipasto bites are as tasty as they are adorable! They’ll be a big hit every time you serve them!
Ingredients
- 24 olives
- 24 salami slices
- 12 ounces mozzarella cheese, cut into 24 pieces
- Optional: drizzle with low carb Italian dressing
Instructions
1. Using an appetizer toothpick thread an olive. Fold a salami slice in half, then fold in half again. Thread onto toothpick.
3. Thread one piece of cheese onto toothpick, making sure toothpick doesn’t go through bottom of cheese, to ensure bite will set level on serving plate.
3. Repeat with remaining olives, salami, and cheese to make a total of 24 antipasto bites.
4. Drizzle with low carb Italian dressing if desired.
