I love making traditional dishes with a twist and making them low carb, and this low carb spaghetti soup does both! This soup is true comfort food! The depth of flavors in this soup are such that no one would guess it comes together in less than 45 minutes. Enjoy as is or topped with some fresh grated Parmesan cheese!

There are so many awesome low carb alternative food choices you can use as substitutions for their high carb counterparts, and you absolutely don’t have to give up on your favorite comfort foods when going keto! I think it’s important to be able to make delicious, flavorful, low carb meals that really make you happy. For this soup, we’re doing a number of things to keep our carb count down. We’re using sugar free pasta sauce which contains considerably less carbs than regular pasta sauce. For our added keto sugar, I used the Swerve brand. It contains zero calories and zero net carbs. Then for our “pasta,” we’re using hearts of palm pasta. It’s an amazing pasta substitute and is impressively similar in taste and texture to regular pasta. All brands of hearts of palm pasta are different, so you’ll want to simmer yours until they’re at your desired tenderness.

This is an easy soup to make, but there are a few things you can do to save some time and to ensure yours comes out perfectly every time! First, I like to start sauteing my celery and onion while my ground beef is cooking. That way, once the ground beef is done, your vegetables will be softened. You will want to drain the excess grease from your ground beef before adding the meat to the veggies. Next, after adding all the remaining ingredients, you’ll want to bring the soup to a boil and then simmer for at least 10-15 minutes. This develops the most amazing depth of flavor to the soup and allows the hearts of palm pasta to soften to a consistency resembling regular pasta. Last, this soup is fairly thick. So, when reheating, you may need to add some water or some additional beef broth.

You have some great options for serving this soup. It’s a filling soup that can be served as is for a complete meal all in itself. You can also serve this soup topped with some fresh grated Parmesan cheese or with some shredded mozzarella cheese. You can also top it with fresh chopped parsley or chopped green onions. Low Carb Spaghetti Soup
This low carb spaghetti soup is amazingly satisfying and delicious! Hearts of palm pasta is the secret ingredient in this amazing soup!
Ingredients
- 2 pounds ground beef
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 celery stalks, diced
- ½ medium onion, diced
- 1 (24-26 ounce) jar keto pasta sauce
- 1 (14.5 ounce) can petite diced tomatoes
- 3 cups beef broth
- 1 tablespoon dried parsley
- 1 tablespoon Italian seasoning
- 1 teaspoon granulated sugar substitute (Swerve)
- 2 (9 ounce) packages hearts of palm pasta
Instructions
1. In a large skillet, over medium high heat, add ground beef, salt, and pepper. Cook until beef is no longer pink, breaking the meat up into small pieces as it cooks. Drain grease.
2. While beef is cooking, add butter and olive oil to a large stockpot. Heat over medium high heat. Once butter is melted, add celery and onions. Cook for 5-7 minutes, or until vegetables start to soften.
3. To stockpot, add cooked ground beef, pasta sauce, diced tomatoes, beef broth, parsley, Italian seasoning, and sugar. Stir to combine.
4. Add hearts of palm pasta and stir to combine. Bring to a boil over high heat. Decrease heat and simmer, maintaining a gentle boil, 10-15 minutes, or until pasta is at desired tenderness.
Notes
When reheating, you can add more beef broth or some water to thin out soup if necessary.
This recipe makes 8 larger servings, but could also be served as 10 smaller servings.
