I have a confession. I’m not a huge fan of donuts, but I love scones! I think it’s the texture that makes them so appealing, but often they’re less sweet than donuts which is another reason I enjoy them. Scones are actually considered a form of quick bread. This is due to the fact that scones are leavened with baking powder and not with yeast, which makes them quick to make because they don’t need a rising time. A fun thing about scones is they can be made plain, savory, or sweet. There are so many additions you can use to make scones, but we’re adding strawberries to this variation. Depending on your preference, you can serve your scones with or without a glaze. Another great choice is to serve them with keto jam. A couple of my favorites include strawberry jam and spiced Christmas jam.

What ingredients go into these low carb strawberry scones?
I played around with ingredients for these scones before coming up with the perfect mixture which creates scones that are soft in the middle, yet crumbly at the same time. To make our scones, we start by combining almond and coconut flour. We then add keto granulated sugar, baking powder, and salt. These are our dry ingredients. For the granulated sugar, I used the Swerve brand. It contains zero calories and zero net carbs and is amazingly similar in its sweetness level to regular sugar. For wet ingredients, we combine a lightly beaten egg with melted butter, heavy whipping cream, and vanilla. After adding our wet ingredients to our dry ingredients, we add the finely chopped strawberries. If you’d like to add a touch of almond flavor, you can use 1 teaspoon of vanilla and ½ teaspoon of almond extract instead of using 1½ teaspoons of vanilla.

The glaze for these scones couldn’t be easier to make. We simply combine keto powdered sugar and unsweetened almond milk. For the powdered sugar, I again used the Swerve brand. Swerve also makes an awesome brown sugar substitute! When buying almond milk, you’ll want to make sure you’re buying unsweetened almond milk. I found the combination of ½ cup powdered sugar and 1½ tablespoons almond milk creates the perfect consistency for glazing these scones. If you find your mixture to be too thick, you can add a tad more almond milk. Alternately if you find your mixture to be too thin, you can add more powdered sugar. One of my children preferred these scones unglazed, while the other liked them glazed. I actually like them both ways. If you’d like, you can also easily double the recipe for the glaze.

These low carb strawberry scones are a delightful treat and the sweet creamy glaze is the perfect topping!
Ingredients
For the scones:
- 2¼ cups almond flour
- ¼ cup coconut flour
- ½ cup granulated sugar substitute (Swerve)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 egg, lightly beaten
- 3 tablespoons butter, melted
- 2 tablespoons heavy whipping cream
- 1½ teaspoons vanilla
- 1 cup finely chopped strawberries
For the glaze:
- ½ cup powdered sugar substitute (Swerve)
- 1½ tablespoons unsweetened almond milk
Instructions
For the scones:
1. Pre-heat oven to 350 degrees. Line a large baking sheet or pizza pan with parchment paper.
2. To a large mixing bowl, add almond flour, coconut, flour, sugar, baking powder, and salt. Stir to combine. Set aside.
3. To a small mixing bowl, add egg, butter, heavy, whipping cream, and vanilla. Stir to combine.
4. Add egg mixture to dry ingredients. Stir to completely incorporate dry ingredients with wet ingredients until a dough forms. Add strawberries and stir to combine.
5. Turn dough out onto a large piece of wax paper. Use hands to form into a ball. Again use hands to press down and shape dough into a circle ¾ inch thick.
6. Cut dough into eight even sized triangles. Use spatula or pie server to transfer triangles to prepared baking sheet or pizza pan, leaving ½ inch space between triangles.
7. Bake for 25 to 30 minutes or until golden brown. Cool completely before glazing.
For the glaze:
1. Add powdered sugar and almond milk to a small mixing bowl. Stir to combine.
2. Drizzle glaze over scones.
