I used 93% lean ground beef to make my taco meat. Any percentage ground beef mixture can be used. You’ll just want to make sure you drain the excess grease from your meat. If you’d like, you can also substitute with ground turkey. For extra flavor and texture, we saute our meat with some diced onion. I added a can of original Rotel diced tomatoes & green chilies; but if you’d prefer you can use mild or hot Rotel. For taco seasoning, I used my homemade taco seasoning. If you’d like, you can use your favorite taco seasoning. You’ll want to check nutritional labels to ensure there are no added ingredients you don’t want in your seasoning. Last, we add tomato paste which gives our seasoned meat some great flavor! I recommend letting the taco meat mixture simmer for about 5 minutes to allow it to thicken a bit.

We top our taco meat with a good amount of shredded cheese. I used colby jack, but you can use any good melting cheese for your dish. If you’d like to add a touch of heat, you could use pepper jack cheese. I recommend using a block of cheese and shredding it yourself as it melts the best. For our low carb topping, we combine eggs, heavy whipping cream, and sour cream. This helps to create a light and airy topping which is also delicious! We top our casserole with even more shredded cheese which creates a perfectly browned crust. You can use the same kind of cheese for your topping as you used in your casserole or can use a different kind of cheese for the topping if you’d prefer.

Ingredients
- Avocado oil spray
- 1 pound ground beef
- 2 tablespoons diced onion
- 1 (10 ounce) can Rotel diced tomatoes and green chiles
- 2 tablespoons keto taco seasoning
- 2 tablespoons tomato paste
- 2 cups shredded colby jack cheese, divided
- 4 eggs
- ½ cup heavy whipping cream
- ½ cup sour cream
- Optional: top with chopped green onions, diced tomatoes or halved cherry or grape tomatoes, shredded lettuce, or sour cream
Instructions
1. Pre-heat oven to 350 degrees. Spray an 11x7 inch baking dish with avocado oil spray. Set aside.
2. In a large skillet over medium high heat, cook ground beef with onions until beef is no longer pink, breaking up into small pieces as it cooks. Drain excess grease.
3. Add diced tomatoes with chiles, taco seasoning, and tomato paste. Stir to combine. Simmer for 5 minutes.
4. Place taco meat mixture into prepared baking dish, spreading evenly to cover bottom of dish. Top with 1 cup shredded cheese. Set aside.
5. In a small mixing bowl, add eggs and beat lightly. Add heavy whipping cream and sour cream. Whisk until mixture is smooth.
6. Pour egg mixture over taco meat and cheese. Top evenly with remaining 1 cup shredded cheese.
7. Bake for 35-45 minutes or until eggs are set. Let set 5 minutes before cutting and serving.
8. Top with chopped green onions, diced tomatoes or halved cherry or grape tomatoes, shredded lettuce, or sour cream if desired.
Notes
You can use homemade taco seasoning or your favorite taco seasoning for this casserole.
