Ingredients
- 32 ounces chopped turnip greens
- 8 ounces bacon, diced
- ¼ cup diced onion
- ¼ cup diced red pepper
- ½ teaspoon smoked paprika
- ¼ teaspoon garlic powder
- ½ cup chicken broth
- Salt and pepper to taste
Instructions
1. Over high heat, bring a large pot of water to a boil.
2. Add the turnip greens. Place a lid on the pot and cook for 5 minutes.
3. Drain turnip greens in a colander. Rinse with cold water.
4. When cool enough, squeeze out as much water from turnip greens as possible. Set aside.
5. While preparing turnip greens, in a large skillet, fry diced bacon until desired crispness. Remove bacon and set aside. Drain all but 2 tablespoons of bacon grease from skillet.
6. In reserved bacon grease, add diced onion and peppers. Saute over medium heat until vegetables start to soften, 3-4 minutes.
7. Add smoked paprika, garlic powder, and bacon to skillet. Stir to combine. Add chicken broth and turnip greens to skillet.
