Sweetened condensed milk is milk that’s had much of its water removed and has been sweetened. To keep ours low carb and keto, we’re using heavy whipping cream in place of the milk. Then we’ll add keto granulated sugar to sweeten. I love the Swerve brand. It contains zero calories and zero net carbs. It’s also delicious! After cooking the cream and sugar mixture for 30-35 minutes, it is removed from the heat and some butter and vanilla are added.
This is my recipe for keto sweetened condensed milk. To a medium saucepan, add 2 cups of heavy whipping cream with ¾ cup granulated keto sugar. Heat, over medium heat, whisking every few minutes. When the mixture starts to bubble at the sides of your pan, decrease your heat to medium low. Then continue to simmer, whisking every few minutes, for 30-35 minutes at which point your mixture will start to thicken. Remove from heat and stir in 4 tablespoons of butter and 1 teaspoon of vanilla. Your mixture will thicken further while cooling. Use immediately or store your sweetened condensed milk in a covered container in the refrigerator. What kind of white chocolate and peanut butter did you use for your low carb white chocolate peanut butter fudge?
I used the white chocolate chips from the brand Bake Believe. These chips contain zero net carbs and they’re quite tasty. They’re sweetened with erythritol and stevia. Bake Believe also makes dark chocolate, semi-sweet chocolate, and milk chocolate chips. You can use any keto white chocolate you’d like for this fudge. For my peanut butter, I check the nutrition label and look for ones that contain only peanuts, or peanuts and salt. There are several brands you can use. I recommend you try a few different ones to find your favorites!

This is a quick and easy recipe, but there are a few things you should know about it. First, I always line my pan on the bottom and up the sides with parchment paper. This way your fudge won’t stick to the pan and you can lift the entire piece of fudge out of the pan to cut. Next, when microwaving your mixture, microwave for 30 second intervals and stir after each interval. Even when doing this, you may find your mixture comes out oily. I find this happens with my white chocolate more often than other types. Don’t worry, just pour your mixture into your prepared pan, and use a paper towel to dab off the oil. Last, you’ll want to refrigerate your fudge for 2 hours, or overnight, to allow it to set before serving.

Ingredients
- 1½ cups keto sweetened condensed milk *(see notes for recipe link)*
- 1 cup keto peanut butter
- 12 ounces keto white chocolate chips
- 1 teaspoon vanilla
Instructions
1. Line an 8x8 inch pan with parchment paper to cover bottom and up sides of pan.
2. In a medium sized microwave safe bowl, place sweetened condensed milk and peanut butter.
3. Microwave for 30 seconds and stir mixture. Repeat microwaving and stirring at 30 seconds intervals until peanut butter is melted and mixture is combined and smooth, 2-2½ minutes total.
4. Add white chocolate chips and vanilla. Stir until chocolate is melted and mixture is smooth. If chips do not all melt, microwave mixture for 30-60 seconds and stir to combine.
5. Pour mixture into prepared pan and refrigerate for 2 hours or overnight before serving.
