This marinated keto cucumber, tomato, and onion salad has become one of our favorite salads. I remember my grandma making salads similar to this one, using fresh vegetables from her garden. My grandma was an awesome cook and I know this is a salad she would have loved! Enjoy!

We combine an awesome combination of ingredients to make this fresh and delicious salad. These include cucumbers, tomatoes, red and yellow onions, and fresh dill. Yum! I chose to use English cucumbers for this salad, but you can use regular cucumbers if you’d like. For tomatoes, I used vine ripened, but Roma tomatoes would be a great choice as well. Using both red and yellow onions brings amazing flavor and color to our salad. If you’d like, you can use all red or all yellow onions for your salad. Last, we add fresh chopped dill to our salad. I absolutely love dill and it works perfectly in this dish. If you want to substitute dried dill weed, you’ll want to use about a teaspoon of dried dill in place of the tablespoon of fresh.
How do I make the marinade for this marinated keto cucumber, tomato, and onion salad?
The marinade for our salad contains just a few simple ingredients, but results in an incredibly flavorful mixture. We combine apple cider vinegar, keto granulated sugar, water, salt, and pepper to make our marinade. When I was making this salad, I had no idea how delicious it would be. I’ve added it to my list of favorite dishes! For my sugar, I used the Swerve brand. It contains zero calories and zero net carbs. It’s also delicious and is incredibly similar in its sweetness level to regular sugar. When you make this marinade, you’ll simply want to add all your ingredients to a mixing bowl and then stir or whisk until most of your sugar is dissolved. After tossing the marinade with your cucumber mixture, I recommend refrigerating it overnight if time allows. At a minimum, I’d suggest refrigerating it for 2 hours before serving.

This is an incredibly easy salad to make, but I do have a few tips so you can make this salad your own! I chose to seed my tomatoes and then chop them. The insides can then be used in dishes such as soups and salsas. Alternately, you can chop your tomatoes into wedges and not seed them. I separated the onions into thin rings, but you can thinly slice your onions and cut them into whatever sized pieces you’d like. I love dill but you could substitute with parsley or even oregano if you’d prefer. After your salad marinates, you can give your salad a taste and add more salt and pepper if you’d prefer. Last, you can serve this salad with just as much or as little of the marinade as you’d like.

Ingredients
- 2 English cucumbers, peeled and thinly sliced
- 3 tomatoes, seeded and chopped into bite sized pieces*
- ½ small red onion, thinly sliced and separated into rings
- ½ small yellow onion, thinly sliced and separated into rings
- 1 tablespoon fresh chopped dill
- 1 cup apple cider vinegar
- ⅓ cup granulated sugar substitute (Swerve)
- ⅓ cup water
- 1 teaspoon salt
- ½ teaspoon pepper
Instructions
1. In a large mixing bowl, add cucumbers, tomatoes, onions, and dill. Toss to combine. Set aside.
2. In a small mixing bowl, add remaining ingredients. Stir or whisk until sugar is mostly dissolved.
3. Pour dressing over cucumber mixture. Toss to combine.
4. Refrigerate for 2 hours or, if possible, overnight. Stir a few times while marinating.
