After spraying my baking dish, I sprinkle about a third of the mixture evenly over the bottom of the dish. Then I place the chicken, skin side up, into the dish. By pressing the chicken down into the seasoning, you’ll make sure the bottoms are perfectly seasoned. The remaining seasoning can then be sprinkled evenly over the top of the chicken. If you do it this way, you save a little time and you don’t have to touch that raw chicken any more than necessary.😉

Ingredients
- Avocado oil spray
- ¼ teaspoon garlic powder
- ¼ teaspoon Italian seasoning
- ¼ teaspoon onion powder
- ¼ teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 6 bone-in, skin on chicken thighs
- 1 cup keto mayonnaise
- 2 tablespoon Dijon mustard
- 1 tablespoon prepared horseradish
- ½ cup freshly grated Parmesan cheese, divided
Instructions
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking pan with avocado oil spray. Set aside.
2. In a small bowl, combine garlic powder, Italian seasoning, onion powder, paprika, salt, and pepper.
3. Sprinkle ⅓ of spice mixture in the bottom of prepared pan.
4. Place chicken thighs in pan, skin side up, pressing down to season bottom of chicken.
5. Sprinkle remaining ⅔ of spice mixture evenly on top of chicken thighs.
6. In a small bowl, combine mayonnaise, mustard, and horseradish. Stir to combine. Add ¼ cup grated Parmesan and stir to combine.
7. Spread mayonnaise mixture evenly over chicken thighs. Sprinkle remaining ¼ cup grated Parmesan cheese over chicken.
8. Bake, uncovered, until chicken reaches 165 degrees, 50-70 minutes.
