I usually boil or saute mine and use them in other dishes. We combine our salt and pepper and add half to the cavity of the chicken. Rubbing our chicken with mayonnaise creates an amazing crust for our chicken while keeping the meat moist and juicy. I used the Chosen Foods brand avocado oil mayonnaise. When buying mayo, you’ll want to make sure there is no added sugar or oils you don’t want. We finish by sprinkling the remaining salt and pepper evenly over our mayo rubbed chicken.

This is a quick and easy dish to prepare, but there are a few things you can do to ensure yours turns out perfectly every time. I just use my hands to sprinkle the salt and pepper inside the cavity of the chicken. Before coating your chicken with mayonnaise, you’ll want to use paper towels and dry your chicken well. Then you can simply use your hands to evenly coat the chicken with the mayonnaise. Alternately, you can use a silicone basting brush to coat your chicken with the mayonnaise. After sprinkling the remaining salt and pepper evenly over the chicken, you can cook it as is or you can truss your chicken before roasting it. Sometimes I do this and sometimes I skip this step!😉

This mayo roasted whole chicken is amazingly juicy and flavorful! We absolutely love this chicken and know you will too!
Ingredients
- Avocado oil spray
- 1 (5-7 pound) whole chicken
- 1 tablespoon salt, divided
- 1 teaspoon pepper, divided
- ¼ cup keto mayonnaise
Instructions
1. Pre-heat oven to 425 degrees. Spray a 13x9 inch baking pan with avocado oil spray.
2. Rinse chicken and dry well with paper towels.
3. In a small mixing bowl, add salt and pepper. Stir to combine.
4. Sprinkle 2 teaspoons salt and pepper mixture into chicken cavity.
5. Rub chicken evenly with mayonnaise. Sprinkle remaining 2 teaspoons salt and pepper evenly over chicken.
6. Bake for 60-75 minutes or until chicken reaches a minimum of 165 degrees.
