When you want a unique and tasty salsa, this Mediterranean cucumber salsa is an awesome choice! We combine fresh ingredients with a simple yet delicious vinaigrette to make this salsa. This is a wonderful dish to take to parties or get togethers or any time you want a special appetizer dip!

We add some awesome fresh ingredients to this salsa which makes it incredibly delicious. We start with diced cucumbers and tomatoes. You can use either regular or English cucumbers for this salad. I used vine ripened tomatoes, but Roma tomatoes would be another great choice. I love the little bite that red onions bring to this salad. If you’d like to cut the bite a little, you can dice the onion, then place the diced onion in enough water to cover and let it set for 5 minutes or so before draining the water. We stay with the Mediterranean theme by adding crumbled feta cheese and Kalamata olives. Yum! We then add some diced jalapenos and chopped cilantro. If you’d like to add more heat to your salsa, you can add some of the jalapeno seeds or membranes as they contain most of the heat!
How do I make the vinaigrette for this Mediterranean cucumber salsa?
I love making quick, easy, and delicious vinaigrettes; and the vinaigrette for this salsa is just that! The standard for vinaigrettes is 3 parts oil to 1 part vinegar, but you’ll often see different ratios in different recipes. For this salsa, I wanted more acidity, so I used 2 parts oil to 1 part vinegar. To our oil and vinegar, we add dried oregano, salt, pepper, and red pepper flakes. You can also use fresh oregano for this salsa. If so, you’ll want to use 1 tablespoon of fresh in place of the 1 teaspoon of dried. After you toss the vinaigrette with the cucumber mixture, you can serve it right away; but I like to refrigerate the salsa for an hour or two or even overnight to allow the flavors to blend together. I recommend you give your salsa a taste and add more salt if you’d like.

This Mediterranean cucumber salsa is a fun, fresh, and delicious salsa! It will be a hit every time you serve it!
Ingredients
- 2 cups seeded and diced cucumbers (1 large or 2 smaller cucumbers)
- 1 cup seeded and diced tomatoes
- ⅓ cup crumbled feta cheese
- ⅓ cup diced red onion
- ⅓ cup sliced Kalamata olives
- 1 jalapeno, seeded, membranes removed, diced
- ¼ cup fresh chopped cilantro
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon pepper
- ⅛ teaspoon red pepper flakes
Instructions
1. In a medium mixing bowl, add cucumbers, tomatoes, feta cheese, red onions, olives, jalapeno, and cilantro.
2. Stir to combine and set aside.
3. In a small mixing bowl, add remaining ingredients. Stir or whisk to combine.
4. Pour dressing over cucumber mixture and toss to combine.
5. Serve immediately or refrigerate until ready to serve.
