Ingredients
- 1 tablespoon butter
- 1 tablespoon olive oil
- 8 eggs
- 1 tablespoon heavy whipping cream
- ⅛ teaspoon salt
- ⅛ teaspoon pepper
- ½ cup diced tomatoes
- 1 tablespoon red onion, diced
- ⅓ cup feta cheese
Instructions
1. In a large nonstick skillet over medium low heat, add butter and olive oil.
2. In a medium mixing bowl, whisk eggs with cream, salt, and pepper.
3. Dice tomatoes and onion and set aside.
4. When butter is melted, increase heat to medium and pour egg mixture into skillet.
