The word chaffle literally means cheese waffle, but it’s so much better than it sounds! Basic chaffles contain just 2 ingredients, eggs, and shredded mozzarella cheese. And while this makes wonderfully delicious chaffles, I prefer to add a couple of ingredients to make the ultimate chaffles! I do recommend you buy a block of mozzarella cheese and shred it yourself to make your chaffles. This melts and combines with the other ingredients the best. The additional ingredients we add to basic chaffles are almond flour and baking powder. These give more structure and fluffiness to our chaffles. These chaffles are quite versatile and can be used to make anything from keto sandwiches to sweet breakfasts!

These chaffles are quick and easy to make, but there are a few things you can do to ensure yours come out perfectly! First, you’ll want to plug in your mini waffle maker to get it heating up. I love my Dash mini maker, but just recently bought the Dash multi mini waffle maker which makes 4 chaffles at a time. Oh, be still my beating heart.💕Either works perfectly for these chaffles, but the multi maker is an awesome time saver. To make our chaffles, we start with lightly beating 2 eggs. Then we add almond flour and baking powder and stir to combine. To this we add our shredded mozzarella cheese and stir to completely combine all ingredients. When making the chaffles, you’ll want to spray your waffle maker with avocado oil spray to ensure the chaffles won’t stick. I cook mine for 3-4 minutes, until they’re nicely browned.

Ingredients
- 2 eggs
- ¼ cup almond flour
- ½ teaspoon baking powder
- 1 cup shredded mozzarella cheese
- Avocado oil spray
Instructions
1. Plug in mini waffle maker to heat.
2. In a small bowl, add eggs and beat lightly.
3. Add almond flour and baking powder. Stir to combine.
4. Add mozzarella cheese and stir until completely combined.
5. When waffle maker is hot, spray top and bottom surfaces with avocado oil. Add ¼ of the chaffle batter to waffle maker. Close cover and heat for 3-4 minutes or until browned.
6. Remove chaffle and set aside. Repeat process for making remaining 3 chaffles, spraying waffle maker with avocado oil before adding each portion of batter.
Notes
You'll want to refrigerate any leftover chaffles.
