I’ve made many chicken salads in my life. I have tried a variety of ingredient combinations. This one is the bomb! It starts with a whole boiled chicken which is well worth the effort to do! My family raved about this and I think it will be a big hit in your house as well!
Let’s talk about boiling a whole chicken!
I like to use a chicken that’s about 4½-5 pounds. This produces approximately 6 cups of cooked chicken. This chicken salad recipe calls for 4 cups of chicken. You can use the remaining chicken in another recipe. You could also add additional dressing ingredients if you’d simple like more chicken salad. I used coarse salt, but you can use regular salt if you’d like. I especially love the color and flavor the turmeric brings to this recipe.
I boil the giblets in water for the same amount of time the chicken boils. Then I take the meat off the neck, chop up the other pieces, and feed it to our pup, Miss Abigail. I do usually toss the livers because she won’t eat them.😂 I also strain the vegetables (and discard) from the liquid the chicken was boiled in and use the liquid as broth for other recipes.
How can I serve this chicken salad?
This salad can be eaten as is in a bowl. It also holds together well and can be served in a lettuce wrap. If you have keto bread, you can always make a more traditional sandwich with it. This is also delicious using chaffles as your “bread.” You can serve it with keto crackers, cheese whisps, or pork rinds for a great appetizer or snack.

*Strain the vegetables (and discard) from the liquid the chicken was cooked in and use the liquid as a tasty broth in another recipe.
*I used avocado oil mayonnaise in this recipe, but you can use homemade or any keto mayonnaise.

Ingredients
For the chicken:
- 4½-5 pound whole chicken
- 1 medium red onion, chopped
- 3 celery stalks with leaves, chopped
- 2 tablespoons coarse salt
- 2 tablespoons peppercorns
- 1 tablespoon ground turmeric
- Water
For the salad:
- 4 cups chicken, cooked and chopped
- 3 tablespoons celery, diced
- 2 tablespoons red onion, diced
- ⅓ cup keto mayonnaise
- ¼ cup sour cream
- 1 tablespoon fresh lemon juice
- ½ teaspoon Dijon mustard
- 1 tablespoon brown sugar substitute (Swerve)
- ¼ teaspoon dill
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
For the chicken:
1. Remove giblets from chicken cavity and discard or use as desired. Rinse chicken under cold water.
2. In a large stockpot, place chicken. Add onion, celery, salt, peppercorns, turmeric, and enough water to fully cover chicken.
3. Bring to a boil over high heat. Cover, reduce heat to medium or medium high, just to keep water at a low boil.
4. Boil for 1½ hours or until chicken is at least 165 degrees. Remove chicken from stockpot. Remove all meat from chicken and chop. Let chicken cool completely.
For the salad:
1. In a large mixing bowl, place chopped chicken, celery, and onion. Stir to combine.
2. In a medium mixing bowl, add remaining ingredients and stir to completely mix.
3. Pour dressing mixture over chicken. Stir until chicken is completely combined with dressing.
4. Serve immediately or refrigerate in a covered container until ready to serve.
