I named this mom’s keto deviled eggs because this is my go-to recipe, the one that I always know will be a hit whenever I make it and will please everyone. What is the best way to make hard-boiled eggs?
That is a loaded question! I do have a go-to recipe for making hard-boiled eggs. But I also live at an elevation of about 7350 feet which makes cooking and baking a bit different. My hard-boiled eggs recipe is fairly simple. First, I bring my water to a boil and then add my eggs. After the water comes back to a boil, I cook for 16 minutes. Your eggs may take less cooking time if you aren’t at altitude. It just takes some experimentation. But that’s part of the fun of cooking!
I just recently bought a Dash egg cooker! This is a great option for making eggs. You can make soft, medium, or hard-boiled eggs with the Dash egg cooker. Plus, it is an adorable appliance that comes in numerous colors to perfectly complement your kitchen! Whatever method you choose to make your hard-boiled eggs, just make sure you immediately place your eggs into an ice bath to stop them from cooking.

I love making deviled eggs and do have some suggestions for you. First, cut your eggs in half lengthwise. Add the yolks to a mixing bowl and add the whites to a serving platter. Use a fork to mash the yolks into fine crumbles. This is an important step to creating creamy delicious, deviled eggs. Add remaining ingredients and stir to combine. I like my deviled eggs salty! But you can taste to preference using between ¼ to ½ teaspoon of salt.
The final step is adding your egg yolk mixture to the egg white halves. If you’d like your eggs to have a rustic look, just spoon the egg yolk mixture into the egg white halves. To create a more modern and sophisticated look, you can use a piping bag for this. If you want a simple method for this step, you can simply add your egg yolk mixture into a Ziploc bag, cut off a tip of the bag, and pipe the mixture in this way.
How can I serve these keto deviled eggs?
These deviled eggs are a great appetizer or snack. They can also be part of a charcuterie board or appetizer tray. My daughter, Rachael, and I recently found a great new antique store near us. I found an awesome antique relish tray that just called my name. It had divisions for a variety of ingredients and a separate area specifically for deviled eggs. My grandma used to make relish trays for our Thanksgiving and Christmas Eve family gatherings. She plated a variety of her homemade pickles and olives for her relish trays. The relish tray I found reminded me of my grandma and of the wonderful memories her cooking created for me. Mom’s keto deviled eggs are filled with simple and delicious ingredients. They prove the age old adage that sometimes less really is more!
Ingredients
- 12 hard boiled eggs
- ¾ cup keto mayonnaise
- 2 teaspoons dill pickle juice
- ¼-½ teaspoon salt
- ¼ teaspoon dry mustard
- Topping: paprika
Instructions
1. Peel your hard boiled eggs. Slice eggs in half, lengthwise. In a medium mixing bowl, add egg yolks. Place egg white halves onto a serving platter or plate.
2. Using a fork, mash the yolks into fine crumbles. Add mayonnaise, dill pickle juice, salt, and dry mustard. Stir to combine.
3. Use a spoon or piping bag to fill egg whites with egg yolk mixture.
4. Sprinkle paprika over eggs.
5. Serve immediately or store, covered, in the refrigerator until ready to serve.
