Mom’s keto pork loin is juicy, tender, and amazingly flavorful. We bought a big pork loin, 8 pounds big😉, so we cut it in half. I came up with this recipe for my half, and my daughter, Rachael, made up a recipe for the other half. Hers is named Rachael’s herb roasted pork loin! Ha, we had dueling pork loins in the house, and we loved them both!

Marinating our pork loin gives it amazing flavor and makes the meat juicy and moist! We combine olive oil, Dijon mustard, tamari, keto brown sugar, lemon juice, garlic, chili powder, salt, pepper, and smoked paprika to create an amazing depth of flavor for our marinade. I use gluten free tamari in place of soy sauce. Although most tamari is gluten free, if you want to ensure yours is gluten free, you’ll want to read your labels. For the brown sugar, I use the Swerve brand. It contains zero calories and zero carbs, and it’s delicious. I used fresh lemon juice for my marinade, but you can use bottled if you’d like. I recommend you let your pork loin marinate for at least an hour. If possible, marinate for 6-8 hours or overnight for the best flavor.

This is an easy dish to make, but I do have some tips to ensure your pork loin will turn out perfectly. Your marinade does most of the work for you, so once you’ve marinated your meat, the rest is a breeze. I like to take my meat out of the refrigerator and let it set while my oven is pre-heating to let it come closer to room temperature. To bake, simply remove your pork loin from the marinade and place it in a baking dish. Then pour all the marinade into the baking dish with the pork. You’ll then simply bake your pork loin until it reaches 150-160 degrees, depending on how you like yours cooked. Last, you’ll want to let your meat set for 5-10 minutes before slicing it.
How can I serve mom’s keto pork loin?
I like to serve my pork loin with some of the pan drippings either drizzled over the meat or served on the side for dipping the meat into! I don’t strain my drippings, but you can if you’d like. You have some great keto options to serve with this dish. You could serve it with some mashed cauliflower or mashed turnips. A side of cauliflower mac and cheese would be an awesome choice as well! You can also pair this dish with some of your favorite keto vegetables. Another option would be to serve this with some keto bread, biscuits, or English muffins.

Ingredients
- 4 pound pork loin
- ½ cup olive oil
- ¼ cup Dijon mustard
- ¼ cup tamari
- 2 tablespoons brown sugar substitute (Swerve)
- Juice of 1 lemon
- 2 garlic cloves, minced
- ¼ teaspoon chili powder
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon smoked paprika
Instructions
1. Place pork loin in a large resealable plastic bag.
2. In a small mixing bowl, add remaining ingredients. Stir or whisk to combine.
3. Pour marinade over pork. Press out as much air from the bag as possible while sealing the bag. Place in refrigerator for 1 hour or up to 24 hours.
4. When ready to bake, pre-heat oven to 375 degrees. Transfer pork loin to a 13x9 inch baking dish. Pour marinade over meat.
5. Bake for 20-25 minutes per pound or until pork reaches a temperature of 150-160 degrees.
6. Remove pork from oven and allow to set for 5 minutes before serving.
7. Serve with roast drippings if desired.
