If you prefer more of a bittersweet option, you could use dark chocolate chips. Lily’s semi-sweet chips are sweetened with erythritol and stevia extract. They contain zero net carbs and I think they taste just like regular chocolate chips!

I like to keep the carb count of my recipes as low as possible. For this recipe, I chose Bob’s Red Mill shredded unsweetened coconut because it came in with a lower carb count than other brands. The coconut I used here is shredded coconut. I like the shredded coconut option versus the flaked coconut option for a couple of reasons. First, the shredded coconut is lower carb than the flaked coconut. And second, I liked the texture of the shredded coconut better than the flaked. You can use unsweetened coconut flakes in place of shredded coconut if you’d like. Just know the texture will be different and the carb count may be slightly higher.

Ingredients
- 1 cup keto semi-sweet chocolate chips
- 1 cup unsweetened shredded coconut
- 1 teaspoon vanilla
- ¼ teaspoon salt
Instructions
1. Line a medium sized pan or baking sheet with parchment paper.
2. In a medium microwave safe bowl, add chocolate chips.
3. Microwave in 30 second intervals, stirring after each interval, until chips are melted and mixture is smooth (approximately 1½-2 minutes total).
4. Add shredded coconut, vanilla, and salt.
5. Stir until mixture is combined.
6. Drop by spoonfuls into prepared pan. Freeze for 20 minutes or until set.
