We start our dish with making an amazingly delicious spice mixture to coat our chicken in. Our spice mix consists of garlic powder, onion powder, paprika, salt, and pepper. Yum! For our meat, we’re using split chicken breasts. And although this may sound like a fancy and difficult cut of meat to work with, it is simply a bone-in cut of chicken with skin. And it’s incredibly easy to bake! Technically, a whole chicken breast includes both sides of the chicken and it is split in two for this cut of meat. It contains all white meat, and because it is bone-in and skin on, the meat comes out amazingly juicy and you get nice crispy skin too! We brush the skin with a little olive oil to help achieve this.
How do I make these oven baked split chicken breasts?
This is an easy dish to make, but there are a few things you can do to ensure your chicken turns out perfectly every time. First, you’ll want to spray your baking dish. I used avocado oil spray for mine. I like to touch raw chicken as little as possible😉, so I place about a third of the spice mixture in my baking dish. Then I use tongs to place the chicken on top of the spices and press the chicken down a little to season the bottom of the chicken. Then after brushing the olive oil on the top of the chicken, you simply sprinkle the remaining spice mixture evenly over the chicken. Last, the bake time for your split chicken breasts will vary depending on the size of your chicken pieces. You’ll want to use a meat thermometer and make sure your chicken is cooked to 165 degrees.

Ingredients
- Avocado oil spray
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ pepper
- 3 large (or 4 medium) split chicken breasts
- 1 tablespoon olive oil
Instructions
1. Pre-heat oven to 375 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a small mixing bowl, add garlic powder, onion powder, paprika, salt, and pepper. Stir to combine.
3. Sprinkle ⅓ mixture onto bottom of prepared baking dish. Place chicken, skin side up, into prepared baking dish pressing down to season bottom of chicken.
4. Add chicken. Brush with oil and sprinkle evenly with remaining seasoning.
5. Bake for 50-70 minutes or until chicken measures 165 degrees.
