When you want a filling, cheesy, creamy dish, this Palmini beef taco casserole is the perfect choice! We make beef taco meat with a quick and easy homemade seasoning mix. Then we add hearts of palm angel hair pasta with sour cream, salsa, and lots and lots of cheese! Yum!

For my meat, I used 93% lean ground beef, but you can use an 80% or 90% lean mixture if you’d prefer. You’ll just want to make sure you drain the grease well before adding the other ingredients. I love making as many things homemade as possible. This is a great way to avoid unnecessary added ingredients, and it’s also a money saver. For this dish, I make my own taco seasoning mixture, which is a combination of chili powder, cumin, garlic powder, paprika, salt, onion powder, pepper, and oregano. The last thing we add is water and tomato paste. This creates a juicy and absolutely delicious taco meat mixture which is also quite low in carbs. You’ll simply want to simmer this mixture for 5-10 minutes, or until the water is absorbed.
What other ingredients go into this Palmini beef taco casserole?
If you’re looking for an incredible low carb keto pasta substitute, I think you’ll be impressed with hearts of palm noodles. I used angel hair noodles for my casserole, but hearts of palm linguine is a great choice as well. Palmini is actually a brand name, but you can use whatever brand of hearts of palm noodles you’d like. You will want to rinse your noodles and boil them until they soften and reach your desired tenderness level. To our taco meat and Palmini noodles, we add sour cream and salsa which gives our casserole creaminess and amazing flavor. This is an awesomely cheesy dish as we add 2 cups of shredded cheese to the casserole, then top it with another cup of shredded cheese. For the best results, I recommend buying a block of cheese and shredding it yourself.

You have some awesome low carb options for serving this casserole! You can serve it just as is and it can be served as a meal in itself. I like to top mine with a big dollop of sour cream, some additional shredded cheddar cheese, chopped green onions, a little shredded lettuce, and diced tomatoes. If you’d like to add a little heat to your dish, you can top it with some diced jalapenos or you can drizzle some hot sauce over it. A nice meal can be made by serving a green salad with all your favorite toppings as a starter dish or served alongside this casserole. A keto soup also pairs nicely with this casserole. You can also serve this casserole with some keto biscuits, chaffles, cornbread, or English muffins. Another great option is to serve a side of cooked vegetables with this casserole.

Ingredients
For the taco meat:
- 1½ pounds ground beef
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon pepper
- ¼ teaspoon oregano
- 1 cup water
- 3 tablespoons tomato paste
For the Palmini casserole:
- Avocado oil spray
- 2 (12 ounce) packages Palmini angel hair noodles
- 1 cup sour cream
- ½ cup salsa
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- Optional: top with additional shredded cheese, chopped green onions, diced tomatoes, shredded lettuce, and sour cream
Instructions
For the taco meat:
1. In a large skillet, over medium high heat, saute ground beef until cooked through, breaking up into small pieces while cooking. Drain well.
2. Add chili powder, cumin, garlic powder, paprika, salt, onion powder, pepper, and oregano. Stir to combine.
3. Add water and tomato paste. Stir to combine. Bring to a boil over medium high heat. Decrease heat to medium and simmer, stirring occasionally, for 5-10 minutes.
For the Palmini casserole:
1. Pre-heat oven to 350 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. Drain Palmini noodles and rinse well. In a medium saucepan, add noodles and enough water to cover. Bring to a boil over high heat. Boil 15-20 minutes, or to desired tenderness. Drain well.
3. To prepared baking dish, add taco meat, Palmini noodles, sour cream, salsa, and shredded mozzarella cheese. Stir to combine.
4. Top evenly with shredded cheddar cheese.
5. Bake for 30-35 minutes, or until cheese is melted and casserole is heated through.
6. Broil for 1-2 minutes if desired.
7. Top with additional shredded cheese, chopped green onions, diced tomatoes, shredded lettuce, and sour cream if desired.
