Ingredients
For the pork loin:
- Avocado oil spray
- 4-6 pound boneless pork loin
- 2 tablespoons olive oil
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon salt
- 1 teaspoon paprika
- 1 teaspoon pepper
- 1 teaspoon rosemary
For the chipotle raspberry sauce:
- 3 tablespoons tomato paste
- ½ cup water
- 2 tablespoons brown sugar substitute (Swerve)
- 1 tablespoon fresh lemon juice
- 1 teaspoon apple cider vinegar
- 1 teaspoon smoked paprika
- ¼ teaspoon salt
- 6 ounces fresh raspberries
- 1 chipotle pepper, chopped, in sauce (approximately 1 tablespoon)
Instructions
For the pork loin:
1. Pre-heat oven to 425 degrees.
2. Spray a large baking dish with avocado oil spray and set aside.
