If you’d prefer, you can substitute any good melting cheese for the cheddar or use a combination of cheeses. Some good options include colby, colby jack, gouda, Monterey jack, mozzarella, or Swiss cheese.

Ingredients
- Avocado oil spray
- 1 tablespoon olive oil
- ½ cup diced red peppers
- ¼ cup diced onion
- 2 cups pulled pork
- 6 eggs
- 1 cup heavy whipping cream
- ½ teaspoon dry mustard
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 cups shredded cheddar cheese, divided
Instructions
1. Pre-heat oven to 375 degrees. Prepare a 9 or 10 inch pie plate by spraying with avocado oil spray. Set aside.
2. In a medium skillet, over medium heat, saute peppers and onion in olive oil for 4-5 minutes, or until vegetables start to soften.
3. Add pulled pork to skillet and saute until heated through, 4-5 minutes. Spread mixture evenly into prepared pie plate.
4. In a large mixing bowl, add eggs. Whisk until smooth. Add heavy whipping cream, dry mustard, salt, and pepper. Whisk to combine.
5. Add 1½ cups shredded cheese. Stir to combine ingredients.
6. Pour mixture into prepared pie plate. Top evenly with remaining ½ cup shredded cheese.
7. Bake for 35-45 minutes or until knife inserted comes out clean.
8. Allow quiche to set for 5-10 minutes before serving.
