Rachael’s raspberry keto pink drink is a drink I came up with for my daughter. She loves this drink on the tart side, but you can easily adjust for your preferred sweetness level!
Rachael’s raspberry keto pink drink is a delicious and fruity drink that takes just 10 minutes to make. I love making special dishes and treats for my family, and often make specific ones for either my husband or my children based upon what I know they enjoy. This drink can be kept a bit tart as my daughter likes it, or you can add more keto sugar to make it as sweet as you’d like!
Let’s talk about raspberries!
Raspberries are an awesome keto fruit choice. They are low in calories, rich in nutrients, and relatively low in carbs. Raspberries provide us with a source of folate, iron, magnesium, manganese, potassium, and vitamins C, E, and K. They are also a good source of fiber. One cup of raspberries contains approximately 7 net grams of carbs. For comparison, one cup of blackberries contains about 6 net grams of carbs and one cup of strawberries contains approximately 7-8 net grams of carbs. Another great thing about raspberries is that they can be used in sweet and in savory dishes. I used fresh raspberries for this drink, but frozen would work great as well.
What other ingredients go into Rachael’s raspberry keto pink drink?
To our raspberries, we add unsweetened almond milk, heavy whipping cream, ice, keto powdered sugar, lime juice, vanilla, and salt. For your almond milk, you’ll want to make sure you’re using unsweetened almond milk. This will help to keep the carb count down for this drink. I used the Swerve brand for my powdered sugar. It contains zero calories and zero net carbs. It’s also delicious and is remarkably similar in its sweetness level to regular sugar. For a nice and tart drink, you can add ⅓ cup of keto powdered sugar. If you’d like your drink sweeter, you can use ½ cup of keto powdered sugar. The vanilla and salt add amazing flavor to our drink and enhance all the other flavors in it. If you’d like, you could also change up this drink by adding ½ teaspoon vanilla extract with another ½ teaspoon of a different extract.
How do I make homemade keto whipped cream to top Rachael’s raspberry keto pink drink?
Once I started making my own homemade whipped cream, I seriously asked myself why I ever used anything else!😊The taste and texture of homemade is amazing! And when you make your own, you’ll know exactly what goes into it! I recommend chilling your mixing bowl and beaters for 15-20 minutes before using. Then, to your chilled bowl, you’ll add 1 cup of heavy whipping cream with 2 tablespoons of keto powdered sugar and 1 teaspoon of vanilla. You’ll want to beat your mixture until stiff peaks form. Stiff peaks mean when you remove the beaters, they form peaks which completely hold their shape. You can also easily double this recipe and can also change up the flavor of your whipped cream by experimenting with different extracts.
