Ingredients
- 8 ounces cream cheese, softened
- 1 cup powdered sugar substitute (Swerve)
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla
- ⅛ teaspoon salt
- 1 cup raspberries, fresh or frozen
- 1 cup heavy whipping cream
Instructions
1. In a large bowl, using an electric mixer, add cream cheese and powdered sugar. Beat until mixture is smooth and creamy.
2. Add lemon juice, lemon zest, vanilla, salt, and raspberries. Beat until creamy and mostly smooth. There will be small pieces of raspberries in mixture. Scrape down the sides and bottom of bowl with a rubber spatula as needed to incorporate ingredients.
3. Add heavy cream. Beat until mixture thickens, 2-3 minutes.
4. Top with keto whipped topping, if desired. Refrigerate leftovers.
