One cup of chopped green cabbage contains about 3 net grams of carbs and one cup of chopped red cabbage comes in at about 5 net grams. I used all red cabbage for this slaw, but you can use green cabbage or a combination of green and red if you’d prefer. A pre-made coleslaw mix is also a quick and easy alternative. To our cabbage, we add chopped cilantro, peanuts, and green onions. I used salted nuts, but you can use unsalted if you’d like. You can then give your finished slaw a taste and add more salt if needed. I did use both the green and white parts of the green onions.

To this we add 2 minced garlic cloves, 2 teaspoons of keto granulated sugar, ½ teaspoon of salt, and ¼ teaspoon of pepper. I added all the ingredients to a blender and blended until smooth. Alternately, you can add all ingredients to a bowl and whisk until combined. This recipe makes about 1¼ cups of dressing, so you’ll have a little leftover. If you’d like, you can also easily double this dressing.

This is a delicious and versatile slaw that can be served with any number of dishes. It pairs nicely with any kind of cooked meat including beef, chicken, pork, and seafood. All your favorite barbecue mains would also pair well with this slaw. If time allows, I like to make this dish ahead of time and let it set in the refrigerator for a few hours to allow the flavors to meld together. You can also serve this slaw immediately after making it. If you’d like a very crisp coleslaw, you can chop your slaw ingredients ahead of time, then toss with the dressing just before serving.
