We combine Italian sausage with fresh vegetables, the perfect egg and heavy cream mixture, and lots of cheese to make a wonderful dish that is satisfying, delicious, and low carb!

You have all kinds of options for your Italian sausage. I found a low carb seasoned pork sausage for my quiche. You’ll want to check your nutrition label to make sure there are no added ingredients you don’t want in your sausage. If you’d like, you can also buy some ground pork and season it yourself. To our Italian sausage, we add some diced bell peppers and onion. I love the combination of green and red peppers; but you can use any color or color combination of peppers you’d like. For my quiche, I used fresh steamed broccoli. You can substitute with frozen broccoli, just make sure you drain it well after steaming it.

This sausage broccoli crustless quiche is amazingly filling and delicious! In just an hour you can have this low carb dish ready for breakfast, brunch, lunch, or dinner!
Ingredients
- Avocado oil spray
- 1 pound Italian sausage
- ¼ cup diced green peppers
- ¼ cup diced red peppers
- 2 tablespoons diced onion
- 2 cups chopped broccoli
- 6 eggs
- 1 cup heavy whipping cream
- 1 teaspoon Dijon mustard
- 1 teaspoon tamari
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 1½ cups shredded Monterey jack cheese
- ½ cup shredded cheddar cheese
Instructions
1. Pre-heat oven to 375 degrees. Prepare a 9 or 10 inch pie plate by spraying with avocado oil spray. Set aside.
2. In a large skillet over medium high heat, add sausage, peppers, and onion. Cook sausage until no longer pink, breaking up into small pieces as it cooks. Drain the fat.
3. While sausage is cooking, steam broccoli until fork tender.
4. In a large mixing bowl, add eggs. Use a fork or whisk to lightly beat eggs. Add heavy cream, mustard, tamari, salt, and pepper. Whisk to combine.
5. Add sausage, onions, peppers, and broccoli to egg mixture. Stir to combine ingredients.
6. Add Monterey jack cheese and stir to combine.
7. Pour mixture into prepared pie plate. Sprinkle shredded cheddar cheese evenly over quiche.
8. Bake for 40-45 minutes or until knife inserted comes out clean.
9. Allow quiche to set for 5-10 minutes before serving.
