It’s also an awesome keto food choice. One cup of chopped green cabbage contains about 3 net grams of carbs. For comparison, one cup of chopped red cabbage contains about 5 net grams of carbs. One of my favorite things about cabbage is how easy it is to incorporate into dishes. You can use it raw, either chopped or shredded, to make delicious coleslaws or salads. For cooking, you can boil, braise, grill, roast, saute, or steam cabbage. Cabbage can be the star in all kinds of dishes, such as with this dish or to make dishes such as egg roll in a bowl. It can also be added to soups, stews, and casseroles.

We start this dish by sauteing up some bacon. You can use either regular or thick sliced bacon. We then use our bacon grease to saute our bell peppers and onions. I used a red and yellow pepper because it’s what I had on hand, but you can use any color or color combination of peppers you’d like. For my onion, I used a yellow onion, but you can use a white or red onion if you’d prefer. I like to cook my peppers and onions just until they start to soften. Although most tamari is gluten free, you’ll want to read your nutritional labels to ensure yours is. For seasoning, we add garlic powder, salt, pepper, and smoked paprika. I love the hint of smoky flavor from the smoked paprika, but you can use regular paprika if you’d like.

Sauteed Cabbage and Peppers

Ingredients
- 8 ounces bacon, chopped
- 2 medium bell peppers, diced
- 1 medium onion, diced
- 1 large head green cabbage, chopped
- 1 tablespoon tamari
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon smoked paprika
Instructions
1. In a large skillet, over medium high heat, saute bacon to desired crispness. Remove bacon to a paper towel lined plate.
2. Do not drain bacon grease from skillet.
3. Add peppers and onions to skillet. Saute, over medium high heat, in bacon grease for 5-7 minutes, just until they start to soften.
4. Transfer peppers and onions to a large stockpot. Add cabbage, tamari, garlic powder, salt, pepper, and smoked paprika. Stir to combine.
5. Cook over medium high heat for 10 minutes, stirring occasionally.
6. Add bacon and stir to combine. Decrease heat to medium. Cover and cook for 5 minutes, or to desired crispness level of cabbage.
