Let’s talk about eggs!
When you want an excellent keto food, you can’t do much better than eggs! Eggs are a low-calorie food which are also low carb; but they are incredibly rich in nutrients! Eggs provide us with calcium, choline, folate, lutein, phosphorus, potassium, selenium, zinc, and vitamins A, B, D, E, and K. They’re also a good source of protein and good fat! Some other wonderful things about eggs are the number of ways they can be prepared and the variety of dishes they can be incorporated into. Eggs can be baked, boiled, fried, poached, or scrambled. And you can choose the exact doneness you prefer for your eggs. Eggs can be the main ingredient in breakfast casseroles, frittatas, omelets, quiches, scrambles, and in egg salad. You can also add them to main dish casseroles, salads, sandwiches, and stir fry dishes!
How do I make the dressing for this sour cream and chive keto egg salad?
The dressing for this salad comes together quickly and is awesomely creamy and delicious. We start with combining keto mayonnaise and sour cream. I used the Chosen Foods brand avocado oil mayonnaise, but you can use any keto mayonnaise you’d like. You’ll just want to check your nutritional labels to make sure there are no added ingredients you don’t want. Fresh chives give our dressing amazing flavor and texture. If you can’t get your hands on fresh chives, you can substitute 2 teaspoons of dried chives in place of the 2 tablespoons of fresh. Dill pickle juice gives our dressing an awesome salty briny taste. We also add yellow mustard to this dressing. I like the taste and color yellow mustard brings to this dressing, but you can use Dijon or even spicy mustard if you’d prefer. Salt and pepper are all that’s needed to finish the flavors of this dressing.
How can I serve this sour cream and chive keto egg salad?
You have some great low carb options for serving this egg salad. It’s an amazing choice to serve as an appetizer using raw vegetable, cheese whisps, keto crackers, or pork rinds as dippers. This egg salad can always be served as is in a bowl with a spoon! If you’d like, you can make an egg salad sandwich using keto bread, biscuits, or English muffins.
