I’m so excited to share this triple berry keto cheesecake salad recipe with you! Many years ago, my husband ordered a berries and cream dessert at a restaurant and he loved it. I knew I had to create a keto recipe that he would love even more! Haha! After he had a bowl for dessert, then requested another bowl the next day for breakfast, I knew it was a keeper! I hope you enjoy it too!

When you’re following a low carb keto plan, there are not many fruits you can eat. But the great news is that, in moderation, you can enjoy some of your favorite berries. For this recipe, we include strawberries, raspberries, and blueberries. Strawberries and raspberries have similar carb counts, while blueberries have about twice the amount of carbs. One cup of strawberries contains about 7-8 grams of net carbs. One cup of raspberries contains approximately 7 grams of net carbs, and one cup of blueberries contains about 17-18 grams of net carbs. Although not included in this recipe, one cup of blackberries contains about 6 grams of net carbs. Berries also contain some important nutrients. Some of these include copper, folate, manganese, and vitamins C and K. They also provide you with valuable antioxidants and are a good source of fiber.

You’ll be amazed at the creamy texture and awesome flavor this cheesecake salad has with the combination of just a few ingredients. We combine softened cream cheese with keto powdered sugar. I used the Swerve brand of powdered sugar. It contains zero calories and zero net carbs. It is also delicious! You can use your favorite keto powdered sugar in this recipe. Then some heavy whipping cream and vanilla extract are added to give this dish the perfect taste and texture.

This awesome dish comes together in just 15 minutes; but there are a few things you should know about making it. First, make sure your cream cheese is softened. This will help ensure you get the creamiest texture possible! After rinsing my berries, I set them out on some paper towels to allow them to dry. Next, I quartered my strawberries, halved my raspberries, and left my blueberries whole. If you’d like larger pieces of fruit, you can cut them into larger or smaller pieces. If your raspberries are small, you may want to leave them whole. Last, when you add your berries, you’ll want to fold them in as gently as possible, so the berries don’t get smooshed. Yes, I think smooshed is the correct culinary term.😂

Ingredients
- 1 (8 ounce) package cream cheese, softened
- ⅓ cup powdered sugar substitute (Swerve)
- 1 cup heavy whipping cream
- 1 teaspoon vanilla
- 9 ounces strawberries, quartered
- 6 ounces raspberries, halved
- 4 ounces blueberries
Instructions
1. In a medium mixing bowl, add cream cheese and powdered sugar.
2. Using an electric mixer, beat until mixture is combined and smooth.
3. Add heavy whipping cream and vanilla. Beat until mixture is smooth, creamy, and fluffy, about 2 minutes.
4. Fold in strawberries, raspberries, and blueberries.
5. Serve immediately or refrigerate, in a covered container, until ready to serve.

Hi Sharon, you don’t beat the whipping cream separately. Just add it to the cream cheese and powdered sugar and beat the mixture for a couple of minutes. It thickens up nicely this way!

Can you use frozen fruit for this?

Hi Cindi. For the best results, I recommend using fresh berries if at all possible. Frozen berries release quite a bit of water and your salad could end up watery and the texture of the salad will not be as good. If you try it with frozen berries, I’d love to hear how it turns out.

I’m prepping for upcoming surgery. I’m cooking (preparing) a lot of food for the freezer. Will the cream chees/cream/sweetener base freeze well? I will be able to stir in the fresh fruit after a day or two post surgery. My husband could do this himself, but I’m trying to make everything easy for him. (PS – my surgery is not life threatening. Just some age related necessary time consuming keep me off my feet surgery! LOL!!)
