This triple onion guacamole was a huge hit at my house! I love making homemade salsa and guacamole. And while basic salsa and guacamole is amazing, I love making fun and different variations. For this guacamole, we’re combining traditional ingredients and then adding three different kinds of onions. I hope you’ll enjoy this dish as much as my family does!
Let’s talk about avocados!
Avocados are one of my favorite foods! I almost always have a few setting out in a bowl on my kitchen island. They’re also an amazing keto food choice. Since avocados contain a lot of fiber, this results in them being low in net carbs. Avocados are also a great way to add healthy fat into your day. Another awesome thing about avocados, besides how delicious they are,😊is the variety of ways you can incorporate them into your day. They can be eaten for breakfast, brunch, lunch, dinner, or for a snack. They pair nicely with egg dishes and all kinds of keto casseroles. You can also top salads, burgers, keto sandwiches, and lettuce wraps with some diced or sliced avocados. And although I love them plain with a sprinkle of salt or a dash of hot sauce, I also love them made into guacamole!
What other ingredients go into this triple onion guacamole?
Although avocados are the star of this dish, they do need some help in both the flavor and texture department! You can mash some of your avocados and keep some in larger pieces which also adds to the texture of this guacamole. To our avocados, we start by adding diced tomato. I used a Roma tomato because it’s what I had on hand, but a vine ripened tomato would be an excellent choice as well. We love the addition of cilantro to our guacamole, but if you’d like, you can add some fresh chopped parsley in its place. For our trio of onions, we add green onions, red onions, and yellow onions. Not only does this combination add great flavor and texture, it also adds awesome color as well. The only other ingredients we add are lime juice and salt.
What are some ways I can serve this triple onion guacamole?
You have some great low carb options for serving this guacamole. Don’t ask me how I know, but it’s really good just eaten as is with a big spoon! For dippers, you can use cheese whisps, keto crackers, or pork rinds. I also like to use low carb raw vegetables as dippers. Some great choices include broccoli, cauliflower, celery, cucumbers, mushrooms, or sliced bell peppers or radishes. You can also use slices of cheese or meats such as pepperoni or sliced sausage as dippers. Guacamole can be used to top burgers, keto sandwiches, or lettuce wraps. It also can be added to salads, or as a side for keto tacos, fajitas, or any kind of keto casserole or egg dish! Another fun way to serve this guacamole is to top some keto chaffles or English muffins with it to make a keto version of avocado toast.

*You can completely mash the avocados or can just roughly dice them if you want a chunkier guacamole.

Ingredients
- 4 avocados
- 1 medium tomato, diced
- 3 tablespoons fresh chopped cilantro
- 2 green onions, diced
- 2 tablespoons diced red onion
- 2 tablespoons diced yellow onion
- 1 tablespoon lime juice
- 1 teaspoon salt
Instructions
1. Halve avocados and discard pits. Scoop out the avocado flesh and place into a medium bowl. Mash to desired consistency.
2. Add remaining ingredients. Stir to combine.
3. Serve immediately or cover with plastic wrap, pressing wrap down onto guacamole, and store in refrigerator until ready to serve.
