Ingredients
- Avocado oil spray
- 2 pounds chicken breasts, cut in ½ horizontally
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 3 celery stalks, diced
- ½ small onion, diced
- 1 cup keto mayonnaise
- ⅓ cup sour cream
- ¼ cup fresh chopped parsley
- 2 tablespoons brown sugar substitute (Swerve)
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
Instructions
1. Pre-heat oven to 425 degrees. Spray a 13x9 inch baking dish with avocado oil spray. Set aside.
2. In a small mixing bowl, add garlic powder, onion powder, salt, pepper, and smoked paprika. Stir to combine.
3. Place chicken into a large mixing bowl. Add olive oil and rub evenly over chicken. Add the seasoning and toss to evenly coat chicken with seasoning mix.
4. Place chicken into prepared baking dish. Bake 20-30 minutes, or until chicken reaches 165 degrees.
5. Remove chicken to a single layer on a plate and allow to cool. Dice chicken.
6. Add remaining ingredients to a large mixing bowl. Add diced chicken and stir to combine ingredients.
7. Serve immediately or cover and refrigerate until ready to serve.
