Most fruits are high in carbs and don’t fit into a keto plan. The awesome news is that in moderation, most berries are a wonderful keto choice. One cup of strawberries contains about 7-8 net grams of carbs. In comparison, one cup of blackberries contains approximately 6 net grams of carbs, and one cup of raspberries contains about 7 net grams. Blueberries are quite a bit higher as one cup contains about 17-18 net grams of carbs. Strawberries are a low-calorie food which are rich in nutrients. They provide a source of folate, magnesium, manganese, potassium, and vitamins A and C. They also provide us with fiber. Strawberries can be eaten raw or can be cooked or roasted and made into jams, jellies, and sauces. For this dish, we’re chopping our strawberries and leaving half chopped and mashing the other half.

Our cheesecake salad starts with combining cream cheese and keto powdered sugar. Cream cheese is an awesome keto choice as it’s relatively low in carbs and adds richness and amazing flavor to both sweet and savory dishes. I used the Swerve brand for my powdered sugar. It contains zero calories and zero net carbs. It’s also delicious and is similar in its sweetness level to regular powdered sugar. We then add sour cream, vanilla, and salt. Sour cream brings a slightly tart element to this salad and the vanilla and salt round out our flavors perfectly. The last ingredient we add is heavy whipping cream. This brings an awesome light and airy element to our salad. A great thing about this salad is that the heavy whipping cream can simply be added to the salad and doesn’t have to be beaten separately. I love shortcuts to recipes, and this is one of my favorites!

You can serve this sweet and decadent salad in quite a few ways. It’s a great dessert option, but can also be served as a sweet snack or breakfast dish. If you’d like, you can also top this salad with some homemade keto whipped cream. To make your whipped cream, I recommend chilling a medium mixing bowl and beaters in the freezer for 15-20 minutes before using. Then, to the chilled bowl, you’ll want to combine 1 cup of heavy whipping cream with 2 tablespoons of keto powdered sugar and 1 teaspoon of vanilla. Then beat this mixture until stiff peaks form. Stiff peaks simply mean when you remove the beaters, they form peaks which completely hold their shape. You can easily double this recipe if you’d like. You can also use different extracts to create different flavored keto whipped cream!

Ingredients
- 16 ounces strawberries
- 16 ounces cream cheese, softened
- 1 cup powdered sugar substitute (Swerve)
- ½ cup sour cream
- 1 teaspoon vanilla
- Pinch of salt
- 1 cup heavy whipping cream
Instructions
1. Chop strawberries into bite sized pieces. Mash ½ of the strawberries. Leave the other ½ in bite sized pieces. Set both aside.
2. In a large mixing bowl, add cream cheese and powdered sugar. Beat until mixture is smooth and creamy.
3. Add sour cream, vanilla, and salt. Beat until combined.
4. Add heavy whipping cream. Beat 3-4 minutes, or until mixture thickens.
5. Fold in strawberries and stir to combine.
6. Serve immediately or store, in a covered container, in the refrigerator until ready to serve.
