This chicken takes just 10 minutes of prep time, so it makes for a great everyday dinner. It’s also incredibly juicy and has the most amazing skin, so you can serve it for dinner parties or special occasion meals as well!

This dish comes together with just a few simple but delicious ingredients. When you remove your chicken from its packaging, you’ll want to check the cavity and remove the giblets if there are any. We then sprinkle some salt and pepper inside the cavity of the chicken and the add ½ lemon. This imparts incredible flavor throughout our chicken. I’ve made chicken coating it with butter and with oil; but for this dish we’re coating our chicken with mayonnaise. This creates the most amazingly browned skin and super moist chicken meat. I used the Chosen Foods brand avocado oil for my mayonnaise. When buying mayo, you’ll want to make sure there is no added sugar or oils you don’t want. You can use your hands or a silicone basting brush to coat your chicken with the mayonnaise. The last step is to sprinkle harissa seasoning evenly over the chicken.

Any low carb vegetable would be a great side to serve with this chicken. Some good choices include asparagus, broccoli, Brussels sprouts, cabbage dishes, cauliflower, green beans, and spinach. This whole roasted harissa chicken is amazingly moist and flavorful! This will be a winner winner chicken dinner every time you serve it!
Ingredients
- Avocado oil spray
- 1 (5-7 pound) whole chicken
- 1 teaspoon salt
- 1 teaspoon pepper
- ½ lemon
- ¼ cup keto mayonnaise
- 1 tablespoon harissa seasoning
Instructions
1. Pre-heat oven to 425 degrees. Spray a 13x9 inch baking pan with avocado oil spray.
2. Rinse chicken and dry well with paper towels.
3. Sprinkle cavity of chicken with salt and pepper. Add lemon to chicken cavity.
4. Rub chicken evenly with mayonnaise. Sprinkle harissa evenly over chicken.
6. Bake for 60-75 minutes or until chicken reaches a minimum of 165 degrees.
