What is za’atar?
I love learning about all kinds of foods and herbs and spices. It’s fun to study where they originated and then experiment with how they can be incorporated into recipes. And, of course, I love creating new recipes and making them all keto and low carb. I first learned about the spice mix za’atar a few years ago when I came across it in one of my favorite local shops which specializes in coffees, teas, and spices. Za’atar is a classic Middle Eastern spice mix; but the actual spices vary based on the exact region the mix comes from. Typically, you’ll find a combination of, oregano, thyme, salt, sesame seeds, and sumac. You may also find mixes which add cumin, marjoram, paprika, pepper, or orange zest.
Let’s talk about the other ingredients in our za’atar keto chicken salad!
I used a combination of white and dark meat chicken for this dish. Alternately, you can use all white meat if you’d prefer. I used a combination of red and green peppers for my salad; but any color or color combination would work. The parsley gives our salad a fresh and pretty touch! And a little diced onion gives our salad flavor and texture. For the dressing, we combine keto mayonnaise and sour cream to create a delicious and creamy dressing. I used fresh lemon juice for my dressing but bottled can also be used. For the sugar, I used the Swerve brand as it contains zero calories and zero net carbs, and it’s delicious. You can use your favorite keto sugar for this dish. Then, along with our za’atar, we add celery seed, salt, and pepper to complete our dressing!
